The Kenzi Kooker - an Aperitif

Clarify the watermelon juice for this cocktail at home by running it through a coffee filter. Clarifying the juice not only makes it last longer due to the reduced oxidation, but it shows up differently in flavor and appearance, providing a brighter experience—perfect when working with fresh and botanical ingredients.

Ingredients

  • 2 ounces clarified watermelon juice
  • .75 ounce Revolutionary Vermouth, or your preferred Blanc vermouth
  • 2 milliliters Bluestem Botanicals
  • Wormwood Glycerite
  • Karamoor Estate Rosé
  • Thyme sprig (for serving)

Preparation

Combine juice, vermouth, and wormwood glycerite in a cocktail shaker. Fill shaker with ice, cover, and shake until outside of shaker is very cold, about 20 seconds. Strain through a Hawthorne strainer or slotted spoon into a wine glass prepared with light ice. Top with rosé (substitute sparkling rosé for a drier, bubbly brunch beverage.) Garnish with a sprig of thyme.
