Aloo Gobhi

Serves 4

¼ cup olive oil
1 teaspoon cumin seeds
2 tablespoons tomato paste
½ teaspoon turmeric
2 teaspoons minced fresh ginger
¼ teaspoon red pepper flakes
2 teaspoons ground coriander
1 tablespoon salt, or to taste
2 large tomatoes, diced
1 large cauliflower, chopped into 1-inch pieces
4 medium potatoes, peeled and diced
1 bunch fresh cilantro, chopped

Warm the olive oil in a large pot over medium-high heat. Add the cumin seeds and stir until golden brown and fragrant, about 1 minute. Add the tomato paste, turmeric, ginger, red pepper flakes, coriander, salt and tomatoes. Cook, stirring frequently, until the tomatoes are soft, about 5 minutes.

Add the cauliflower and potato pieces and about ½ cup water, stir, and cover. Simmer until the water evaporates and the tomatoes are tender, about 15 to 20 minutes. Off heat, stir in cilantro and serve.
